That’s interesting and actually the base of another classic recipe: The Delmonico Special, a spirit-forward slow-sipping variation on a “very wet Martini” packed with power. This is already a variation on the classic Delmonico, which is basically a Manhattan with cognac instead of whiskey. Just to show you that variations can move in all directions.

The Slightly Lower ABV Sazerac
I often mentioned that my Nr.1 recipe of choice is the Old Fashioned. It’s also a quick and easy way to experience how a spirit behaves in a cocktail. If that spirit is a brandy, cognac or rye whiskey I would probably go for a Sazerac style of drink which is actually a variation on the Old Fashioned. Why? Because these bold spirits work so well together with the extra anise flavors of this drink.
No, Soberano is not the housebrand of my good friend Soberon, it’s a sweet Spanish brandy at only 36°. This is a product made by Gonzalez Byass, the producers of the best sherry wines. You can expect a soft and silky texture, with a full body. Lots of oak and roasted nuts. The name ‘Soberano’ is related to ‘Sovereign’ (in Spanish the v is often pronounced as a b), this brandy was created to highlight their relationship with the King of Spain.
I received this bottle of Soberano Solera Brandy on the same day as a new bottle of Absente. It’s almost like a match made in heaven. This calls for an easy sipping Sazerac, slightly lower in alcohol.
Henri Bardouin Absente is my favorite brand of Absinthe. I always have the 55° Absinthe in my homebar. This new flashy bottle (which looks absolutely stunning in any bar) is much lower in alcohol, only 26°. It would suit better in what we generally categorize as liqueurs. The 55° is also defined as a herbal liqueur, but with 55° it’s as strong as your base spirit.
The Slightly Lower ABV Sazerac
Ingredients
60 ml Soberano Solera Brandy
10 ml Sugar syrup
2 dashes Peychaud’s Bitters
A few ml of Absente 26° for a rinse
Method
Rinse the glass with Absinthe (Swirl it around, you want a thin coating of absinthe on the complete inside of your glass) and add icecubes. If you don’t use too much Absinthe, just leave it in the glass. It there’s too much Absinthe left on the bottom, discard it. Because this cocktail is a bit lower in alcohol, you could discard the icecubes too. If the glass and the cocktail are both cold enough, this should give you a perfect experience. I actually like my Sazeracs with a huge block of ice, which will cool the drink but won’t add much dilution. I was almost out of ice, so had to settle for the smaller cubes.
Stir the Soberano brandy with sugar and bitters in a mixing glass with lots of ice. Strain the cocktail into the chilled and rinsed tumbler. Garnish with lemon.

The result was absolutely delicious, I liked it so much that I actually made it again the next day 😉
Hennessy Sazerac
Ingredients
4 cl Hennessy Cognac Very Special Limited Edition
2 cl Bulleit Rye whiskey
3 dashes Peychauds bitters
10 ml simple syrup
Absinthe (for the rinse)
Method
Add a splash of Absinthe to your tumbler and swirl it around. Don’t discard it, this stuff is too good to throw away 😉
Add the rest of the ingredients to a large mixing glass with lots of ice. Stir for 20 seconds and strain in the tumbler. Add a big block of ice and garnish with lemon.

Italian Sazerac
With this brandy I’m now treating myself to a delicious Sazerac.
Italian Sazerac
Ingredients
60 ml Vecchia Romagna brandy
10 ml Simple syrup
5-10 ml Absinthe
3 drops Absinthe bitters (or Peychaud’s bitters)
Method
Start by coating your glass with a bit of absinthe. How much Absinth is hard to say, because it depends on the size of your glass. I used a large Cognac glass for my drink, so I needed a bit more. Don’t discard the extra Absinthe, just leave it in the glass. Remember to swirl it around again before adding the rest of the cocktail.
Add your brandy, syrup and bitters to a mixglass with lots of ice. Stir for half a minute, swirl your glass and stir again for a few seconds. Strain into your glass.
No garnish needed, if you really want something add a twist of lemon. Enjoy.

Emozioni di Emilia-Romagna : A cocktail based on Vecchia Romagna brandy
I really love whisky and bourbon, but I’m not a really big fan of cognac or brandy. But, when used in a perfectly balanced cocktail (e.g. a Sazerac), I really appreciate the complexity of this grape-based spirits.
In 2018 I was part of the international press team for the global finals of the Amaro Montenegro Vero Bartender competition in Bologna. Already on the first day of our stay, we visited the production plant of Amaro Montenegro, which is also the production facility of Vecchia Romagna, a real Italian brandy. This is the brandy I’m going to use for my cocktail today.
My recipe is a simplified version of the ‘East India’ cocktail. I wanted to make sure you can replicate this cocktail at home. If you don’t own a barspoon, just use a teaspoon. You can buy the bitters and syrup at any liqueur store.

Ingredients
6 cl Brandy Vecchia Romagna Classica (If you don’t have it, use your favourite brandy or cognac, this will however alter the resulting taste)
1 bsp Maraschino liqueur
1 bsp Orange Curaçao (If you don’t have this orange liqueur, use Cointreau)
1 bsp Angostura bitters
1 bsp Raspberry syrup
Method
Put everything together in a mixing glass with lots of ice. Stir together for about 20 seconds. Strain into a cognac glass. Garnish is optional, but you could use some lemon peel.

Stijlvolle Geschenktips : Lecompte Calvados
Calvados wordt vaak vergeleken met cognac. Beide zijn in principe eau-de-vies, gestookt van verschillende fruitsoorten. Calvados wordt gestookt uit appel- of perencider en is afkomstig uit het departement Calvados in Normandië.
Distillerie Lecompte werd opgestart in 1923 door Alexandre Lecompte in een oude boerderij in Notre Dame de Courson. Hun Calvados is van zeer hoge kwaliteit, onder meer door het gebruik van authentieke stookketels uit de Cognac regio en appelen uit vlakbij gelegen appelgaarden. De rijping gebeurt in nieuwe grote eikenhouten vaten, wat steeds een duidelijke vanilletoets toevoegt.

Ingrediënten
5 cl Lecompte Calvados
2 cl perenlikeur
2 cl vers limoensap
1 dash notenbitters
Bereiding
Alle ingrediënten samenvoegen in een shaker met ijs. Krachtig shaken gedurende minstens 15 seconden. Dubbel zeven in een mooi Martiniglas, wij kozen er eentje uit de collectie van Zahara Homeware. Versieren met een gedroogd citroenschijfje.

OFW - Brandy Cocktail met Vecchia Romagna
Vecchia Romagna Riserva 10 ani is een mooie gerijpte Italiaanse brandy gemaakt volgens de ‘Charentais’ methode. Hierbij kiezen ze voor een langzame distillatie in kleine koperen stookketels. In kleine Limousin eiken vaten mag de spirit dan 10 jaar rijpen met deze gouden brandy als resultaat.
Echte liefhebbers degusteren deze brandy het liefst puur in zeer grote cognacglazen, waarbij de warmte van je hand de brandy een klein beetje zal opwarmen, waardoor alle aroma’s naar boven komen. Wij maken met deze brandy een echte klassieke “Brandy Cocktail”. Heel gelijkaardig aan een Old Fashioned, alleen werd de suiker vervangen door de bitterzoete sinaasappellikeur, die uiteraard ook heel wat suiker bevat.
Brandy Cocktail
Ingrediënten
5 cl Vecchia Romagna Riserva 10 ani
2 cl Cointreau
2 dashes Angostura bitters
2 dashes Absint
Bereiding
Alle ingrediënten samenvoegen in een groot mengglas met veel ijs. Goed roeren gedurende minstens 15 seconden tot de cocktail voldoende gemengd en gekoeld is. Serveren in een voorgekoeld Martiniglas. Versier met een citroenkrul.

Bezoek aan WineFair Lanaken
Wij bezochten de beurs op de laatste dag en onze aandacht ging ook weer in hoofdzaak naar alles wat “geen wijn” was. We ontdekten enkele bijzonder lekkere spirits !
